Just in time for summer, I’ve stumbled onto the most delicious overnight oats recipe: creamy, cold and perfect for summer! I was loyal to the Oh She Glows overnight oats recipe for years, also super delicious, but then I stumbled onto this it when one of my No Nonsense Nutrition clients shared this Coconut Cream Pie Chia Overnight Oats recipe from Flavor the Moments. The thing is, I didn’t have all of the ingredients, so I ended up omitting the two coconut ingredients and substituting  cashew milk and it’s basically the perfect cold and creamy breakfast for summer. Here goes:

Ingredients:

  • 2 Cups of old fashioned oats
  • 2 Tablespoons chia seeds
  • 4 Tablespoons maple syrup
  • 2.5 Cups of unsweetened cashew milk
  • 1 Cup Plain Greek yogurt

Mix it in a bowl, and then try to resist eating it before the liquid is dissolved – takes a few hours. This makes 6 servings. I’ve been doing this every couple of nights and it takes less than 4 minutes to make. Put it into your refrigerator, covered with plastic wrap, zero cooking involved! I love the contrast of the tart yogurt and the sweetness from the syrup. Some mornings I top it with some berries. On father’s day I even made it pinterest-fancy with rows of fruit. Try this out and let me know if you’re also obsessed.
