Super Simple Weeknight Meals: Turkey + Broccoli Stirfry

Earlier this week I showed my inner circle exactly what I bought in this week’s grocery haul and I also told them what my weekly plan is for this week’s meals.  My inner circle gets all of my best stuff every Monday. If you’re not on the list, you can sign up here.

I got a few requests to share the famous (and infamous) Ground Turkey Stir-fry recipe that my friend Ashley shared with me. I think I’ve changed it a bit from her original, but it’s so simple and has become a regular dinner in our rotation. There are never any leftovers with this one!

Ingredients:

1 Package of Ground Turkey

1 Tbsp Coconut Oil

Chopped Garlic to taste

1/4 cup Soy Sauce (add more to taste)

1/4 cup Maple Syrup (add more to taste)

1 Bag of Broccoli Slaw

1 Head of Broccoli – Chopped into Florets

1 Small Red Onion

In a deep pan, brown the ground turkey. Once cooked remove the turkey from the pan and add the coconut oil and garlic. Cook for a couple of minutes until golden. Add the broccoli florets and onion. Stir-fry until tender but crisp. Add the bag of broccoli slaw, Soy Sauce and Maple Syrup and stir-fry until tender and crisp. Add the ground turkey back into the pan and continue to stir for a minute.  Then add more Soy Sauce and Maple Syrup to taste.

I serve this with either basmati rice, quinoa or brown rice and they totally gobble it up!  Let me know if you try it, I’d love to hear if you like it. xo J
